Sometimes you need to get creative to get enough vegetables into your diet especially when you have kids. With this zucchini bread recipe you can hide some roughage into a sweet treat. Zucchini is a great source of fiber and is rich in heart-healthy potassium. It also has a very subtle flavor which makes it an ideal addition to baked goods.

If you’ve never made this recipe before it might sound a little funky to make a vegetable-based bread but it is very similar to banana bread. It makes a wonderfully moist and hearty bread that isn’t too sweet. This recipe is dairy-free and with this guide you can adjust it for people with eggs allergies as well. I also adjusted the recipe by using half white flour and half whole wheat flour instead of just using white flour alone. Whole wheat flour is higher in fiber than white flour and contains a variety of vitamins including folate, riboflavin and vitamins B-1, B-3 and B-5. Whole wheat flour has also been proven to help lower cholesterol so I try to sneak it into my baking as much as possible.
